Focaccia with Flowers
Ingredients
• 1 recipe homemade flatbread (recipe follows) OR
• 1 package refrigerated or frozen pizza dough, thawed (Note: dough, not ready-made pizza crusts)
• olive oil
To decorate:
• red, orange and/or yellow peppers
• grape tomatoes
• fresh green herbs such as scallions, basil, cilantro, parsley, dill, or fennel
• seeds, nuts
• slender asparagus spears
• radishes
• spiralized carrots or zucchini
• onion — red or purple onion is especially nice
• olives
• edible flowers, optional
Tools:
• chef’s knife
• rimmed baking sheet
If making focaccia from scratch, you’ll also need:
• large bowl
• measuring cups
• measuring spoons
• large spoon for mixing
Mezze Board
Mezze is an abundant array of Middle Eastern nibbles. You’re limited only by your imagination, but
some possibilities include:
fresh/raw
• grape tomatoes
• pistachios (in shell okay)
• olives
• radishes, especially watermelon radish
• green beans
• red or yellow pepper
• grapes
• cucumber
• fresh herbs such as cilantro, rosemary and basil
• fresh greens, such as spinach, arugula and/or tender lettuce
• harissa roasted cauliflower (recipe follows)
• tahini sauce (recipe follows)
prepared commercial items such as
• canned artichoke hearts, rinsed and well-drained
• hummus
• baba ghounoush
• stuffed grape leaves
• vegan feta
• pita chips or quartered pita
• falafel
• dried Medjool dates

S’mores Board
Suggested items:

• carambola/starfruit
• berries, especially long-stemmed strawberries

• vegan marshmallows (Dandies vegan marshmallows available at Fresh Market and Whole Foods)
• vegan graham crackers just-happen-to-be vegan graham brands in your supermarket include
Keebler, Kellogg’s and Nabisco original graham crackers)
• dried fruit like dried apricots, Medjool dates and dried figs
• cookies
• fudge sauce (store-bought or homemade — recipe follows)

Focaccia
1 teaspoon yeast
2 teaspoons sugar
1 cup warm water
1 tablespoon olive oil, plus a drizzle or two more
1/2 teaspoon sea salt
1-1/2 cups unbleached all-purpose flour *
1-1/2 cups whole wheat flour*
