Patatas Bravas (Crispy Potatoes with Spicy Tomato Sauce)

Ingredients

  • 1 pound small (bite-sized) potatoes
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 1 14-ounce can crushed tomatoes
  • 1 teaspoon paprika, sweet, hot, or smoked
  • 1/4 teaspoon red pepper flakes
  • Sea salt, to taste
  • Optional — 3 cups fresh spinach arugula or other tender fresh green

Pa’am Tomaquet (Catalan Tomato Toasts)

Ingredients

  • 1 garlic clove
  • 2 large very ripe fresh tomatoes
  • 6 to 8 slices fresh baguette ( about 1/2 baguette)
  • 2-3 tablespoons olive oil
  • Sea salt, to taste

Pimentos Padrón (Blistered Peppers)

Ingredients

  • 1 pound shishito or padrón peppers
  • 2 teaspoons olive oil
  • Sea salt
  • (optional) 1 lime

  • Plate or shallow bowl for serving

Sherried Mushrooms

Ingredients

  • 8 ounces mushrooms (basic button mushrooms are fine - halved if large)
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/3 cup dry sherry
  • (optional) sprig or two of fresh thyme leaves
  • (optional) chopped flatleaf parsley for garnish
  • Sea salt and fresh ground pepper

Party Olives

Ingredients

  • 1 lemon
  • 1 orange
  • 1 garlic clove
  • pinch red pepper flakes
  • 1 good-sized sprig or rosemary
  • 1 good-sized sprig of sage
  • 3 tablespoons olive oil
  • 1 pound of your favorite olives, green, black or both (whole olives with pits for best results)
