Ingredients
- 1 fennel bulb
- 1/2 cup kalamata olives
- 1/2 pint grape tomatoes
- 3 garlic cloves, minced
- 1 tablespoon olive oil
- 1/4 cup white wine, Sambuca or vegetable broth
- a sprig or two of thyme leaves
- sea salt
- fresh ground pepper
Caribbean Curried Sweet Potato

Ingredients
- 1 tablespoon coconut oil or a neutral oil such as grapeseed
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 teaspoons fresh ginger, grated, or 1 teaspoon powdered ginger
- 2-1/2 cups sweet potato cubed — about 1 good size sweet potato
- 1 cup tomatoes
- 4 cups spinach or other seasonal tender leafy green, loosely packed, chopped, tough stems removed
- 1 cup full-fat coconut milk
- 1-1/2 teaspoons Jamaican curry powder or or other mild curry powder
- 1 tablespoon fresh lime juice (about half a lime)
- a handful of cilantro leaves, chopped
- sea salt
- fresh ground pepper
- optional garnish — 1/2 cup roasted cashews, chopped

- 1/4 cup grapeseed or other neutral oil, plus a little more for oiling the cake pan
