Award-winning vegan food writer Ellen Kanner shares two easy and delicious recipes showcasing mushrooms that you will want to add to your cooking repertoire. Space is limited for this online event. Mushroom Étouffée
Ingredients:
- 3 tablespoons vegan butter (or olive oil)
- 1 large onion, chopped
- 2 stalks celery, chopped
- 1/2 red, yellow or other sweet pepper, chopped
- 3 cloves garlic, minced
- 1/2 jalapeno, minced
- 2 tablespoons unbleached all-purpose flour (or chickpea flour or fava flour)
- 1/3 cup red wine (may substitute with an additional 1/3 cup vegetable broth)
- 1 cup chopped tomatoes
- 1/2 cup vegetable broth
- 2 teaspoons Creole or blackened seasoning (may substitute with 1 tsp paprika and garlic powder, plus a pinch of cayenne)
- 1 bay leaf
- 1 pound mushrooms, chopped
- sprig of fresh thyme
- sea salt and freshly ground pepper
Kitchen Tools:
- measuring spoons

- large mixing spoon
- Dutch oven or large soup pot
Crispy Buffalo Mushrooms
Ingredients:
- 1 pound mushrooms (slice into bites if large)
- 2/3 cup chickpea or fava bean flour
- 1/3 cup corn starch
- 3/4 cup water
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon cumin
- pinch sea salt
- 1-2 tablespoons olive oil or grape seed oil
For the Buffalo sauce:
- 4 tablespoons (1/4 cup) vegan butter
- 1/3 cup commercial hot sauce
- 1-1/2 teaspoons white vinegar
- 1/4 teaspoon garlic powder
- pinch cayenne, if desired
or 2/3 cup of your favorite commercial Buffalo sauce
Kitchen tools:
- half sheet sheet pan
- parchment paper or silicone baking mat
- chef’s knife
- large mixing spoon
- slotted spoon
- pastry brush for basting
- small sauce pan
Note: Plain white button mushrooms, the most accessible and affordable mushroom, work well in both of these recipes. However, feel free to combine them with other varieties, like cremini or shiitake.
