Pinecrest Virtual Programs RoomDid you know that foods other than chocolate can make us feel happy? Mushrooms, nuts, beans and leafy greens are also help boost your mood. Cook alongside vegan Chef Ellen Kanner as she demonstrates easy, delectable recipes that can help raise your spirits. Registration is required. Ingredients and Kitchen Equipment
French Lentil Salad
Ingredients:
- 1-1/2 cups dried lentils
- 3 cups water or vegetable broth
- 2 cloves garlic
- 1 bay leaf
- a few whole peppercorns
- 2 tablespoons Dijon mustard
- 1/3 cup walnut or olive oil
- 1 tablespoon sherry vinegar
- 1 teaspoon agave or maple syrup
- 1 tablespoon fresh thyme leaves from 1 good sprig
- 2 carrots diced
- 2 stalks celery chopped
- 2 scallions chopped fine
- 4 cups arugula or spinach leaves, coarsely chopped
- sea salt and pepper to taste
- 1/3 cup walnuts toasted for garnish

Bohemian Mushrooms
Ingredients:
- 1 tablespoon olive oil
- 3 garlic cloves minced
- pinch red pepper flakes, optional
- 1 pound mushrooms cremini or white button mushrooms, wiped clean and sliced
- 1 small tomato chopped (about 1/2 cup)
- 1 tablespoon sweet paprika
- 1 teaspoon caraway seed
- 1 teaspoon coriander
- 1 tablespoon fresh dill, chopped
- sea salt and fresh ground pepper to taste
- juice of 1 lemon
Garnish for mushrooms:
- additional chopped dill
- chopped cilantro
- (optional) a dollop of plain unsweetened vegan yogurt

Catalan Spinach
Ingredients:
- 1/4 cup raisins
- 1 garlic clove
- 2 teaspoons olive oil
- 1/4 cup pine nuts, pistachios or chopped almonds
- 6 cups spinach, chopped
- 2 teaspoons sherry vinegar
- sea salt and freshly ground pepper

Mexican Chocolate Love Bites
Ingredients:
- 1 cup raw almonds
- 1 cup Medjool dates pitted
- 3 tablespoons Dutch process cocoa
- 1/2 teaspoon cinnamon
- pinch cayenne
- 1/4 cup cacao nibs
- 1/2 teaspoon vanilla
- 2 tablespoons fresh brewed coffee
- 1/2 cup powdered sugar + 1/4 teaspoon cinnamon or Dutch process cocoa for rolling the love bites
